Egg White Saga Continued...
UPDATE: I requested to have my labs drawn again last week. Just to recap, I did AIP elimination in 2017 (antibodies dropped to 27 and symptoms disappeared). I successfully and very slowly reintroduced green beans, cacao, white rice, egg yolks, black pepper, and ghee over the course of five years, checking labs frequently. I maintained the same weight since the birth of my last child in 2014. Fast forward to Dec 2022. I missed omelets so much and decided my next trial would be egg whites. I ate them in December without any discernible symptoms but I checked labs in Jan and sure enough, TPO increased ten fold. So, I stopped eating them. I figured two months without them would get me back to where I was, but nay. I started gaining weight inexplicably. Nothing had changed in my diet or activity level. I started to wonder if I was going through menopause suddenly. I asked my doc for labs and got them back yesterday. Now, I have an explanation for why I’ve been gaining weight. I am hypo! I haven’t been hypo in seven years and my weight was constant until two months ago. My antibodies are still high as well. So, by trying egg whites back in December, even though I eliminated the eggs two months ago, my thyroid got attacked, raising antibodies and subsequently increasing my TSH. It’s probably going to take a few more months to “get it out of my system” and get my thyroid back to normal. I am contemplating going back to square one and going back to the elimination phase, but not sure that is necessary. But, at least I know that I’m not losing my mind because it was driving me batty gaining weight for no reason. My husband said he has never seen anyone so excited to proclaim, "Yay, I am hypo!"
