Stefanie’s Autoimmune Method (AIM) “Pita Bread”

 

Ingredients

½ cup Cassava Flour (I use Otto’s)

½ cup Tapioca Flour (I use Bob’s Red Mill)

¼ tsp sesame seeds (only if you have completed the first sixty days and successfully added seeds back into your diet)

3 tbsp ghee (if you were able to add butter back in, you can sub butter instead)

¾ cup filtered water

¼ tsp sea salt

 

Directions:

1.     Pre-heat oven to 400 degrees F.

2.     Mix all ingredients together in a large bowl.

3.     Our the mixture onto unbleached parchment paper (I use “If you care”: https://www.amazon.com/If-You-Care-Certified-Parchment/dp/B06Y5X568Z).

4.     Spread the mixture to about 1/8 inch thickness across the parchment paper.

5.     Bake for 20-25 minutes until crispy. Eat as a “pita” or break apart into “crackers”.
