AIM Sweet Potato Hash (cast ion skillet version)

Ingredients

12 oz. uncured sugar-free bacon (I recommend Maverick - No Sugar or bacon from www.grasslandbeef.com) cut into 1-inch pieces

2 tbsp Ghee or Coconut Oil

4 cups diced zucchini or celery

6 cups diced sweet potatoes

1 cup chopped yellow onion

Salt and Black Pepper To Taste

Directions

1. In a cast iron skillet, cook bacon pieces over med-low heat until crisp

2. Remove cooked bacon using a slotted spoon. Add coconut oil or ghee to the skillet.

3. Pre-heat oven to 400 degrees F.

4. Fry the sweet potatoes in the skillet on med-high heat until they are golden-brown and start to soften.

5. Add zucchini and onion and cook until they begin to soften.

6. Stir in bacon and remove from heat.

7. Place skillet in the oven and bake 15-20 minutes.

8. You can top this with Mastodon AIP Sauce by KC Natural

Stefanie’s AIM Sweet Potato Hash (pyrex version)

 

Ingredients

12 oz. bacon (I recommend Maverick No Sugar or grasslandbeef.com bacon) cut into 1-inch pieces

2 TBSP Ghee or Coconut Oil

6 cups diced sweet potatoes

1 cup chopped yellow onion

Salt and Black Pepper To Taste

 

Directions

1.     Pre-heat oven to 400 degrees F.

2.     In a 3-cup pyrex, lay the sliced sweet potatoes with minimal overlap.

3.     Pre-cook the bacon in the oven and crumble it.

4.     Add the sliced onion.

5.     Add 3 tbsp of ghee or grass-fed butter.

6.     Add Salt and Pepper.

7.     Place in the oven and bake 45 minutes.

8.     You can top this with Mastodon AIP Sauce by KC Natural.
